Mr Griffiths met his partner, Kate Kniveton, back in 2006 when he was named as Burton's parliamentary candidate for the Tories in the run-up to the 2010 election.
The couple, both aged 42, hit it off immediately and have been dating for a number of years.
Griffiths said he "shocked" Kniveton with his proposal.
He told the Burton Mail: "I was very traditional and got down on one knee. Even I have to admit that it was quite romantic. I think Kate was very shocked and delighted at the same time – she said 'yes' straight away and I even managed to get the size of the ring exactly right."
Burton-born Kniveton said she was "over the moon" with the proposal.
She said: "We were having a quiet night in and then all of a sudden he got down on one knee and asked the question. I was over the moon and said 'yes' straight away."
